Mini Chocolate Chip Pumpkin Muffins

Start your day in a yummy way with pumpkin mini chocolate chip muffins. You'll get all of the sweetness of chocolate and the goodness of pumpkin in these kid-friendly muffins. Let your little one help make this anytime treat. 


Ingredients:


  • 1 box of spice cake mix (**see note below)
  • 1 can of pumpkin puree
  • 2/3 cup of water
  • 1/2 cup of miniature chocolate chips

Directions:

1. Mix the cake mix, pumpkin and water until smooth, then add the chocolate chips. 

2. Drop dough by teaspoonful into a mini-muffin pan. 

3. Bake at 350 degrees for 12-15 minutes, until tops spring back when touched. Cool and serve. So simple and so yummy!

You can make these muffins into treats for any holiday by using holiday cupcake liners in the muffin tin. 

If you bake in full-sized muffin pans instead of mini muffins, allow 22-25 minutes to cook. 

**If you don't have a spice cake mix, you can use a yellow cake mix and add 2 teaspoons of cinnamon and 1 teaspoon of nutmeg.**
