For the past several years, we've added fun appetizers to our holiday table. The kids love being part of the action on special days, so it's a win-win for us. Kids of all ages will enjoy this turkey shaped veggie appetizer.
Ingredients:
- 1 package leaf lettuce
- 1 bunch celery, cut into halves
- 1 16-ounce package baby carrots
- 1 red pepper, sliced as shown
- 1 yellow pepper, sliced as shown
- 1 green pepper, sliced as shown
- 1 package grape tomatoes
- 2 or 3 cucumbers, sliced
- 1 yellow crookneck squash
- 2 raisins and toothpicks to attach to squash (you can also use black olives or just draw eyes with a black marker)
- Ranch dressing or your favorite dip
Directions:
- Wash all vegetables.
- Arrange lettuce around the edge of a large round platter.
- Cut celery stalks into halves. Arrange on top of the lettuce.
- Cut red, yellow, and green pepper in half, then slice into long slices and arrange on top of carrots and celery to create feathers.
- Slice squash in half lengthwise to create turkey's head. Using toothpicks cut in quarters, attach add raisin eyes, a red pepper slice for the wattle, and a yellow pepper triangle for the beak.
- Slice cucumbers (you can peel them if desired). Arrange below the celery and carrots as shown.
- Place squash on top of cucumbers and lettuce. Arrange whole grape tomatoes around the squash. Serve with ranch dressing.
