On Groundhog Day each year, Punxsutawney Phil emerges from his burrow in Punxsutawney, Pennsylvania on Feb. 2, shortly after 7:20 AM. Legend has it that, if Phil sees his shadow, there will be six more weeks of winter. If Phil doesn't see his shadow, there will be an early spring. Groundhog Day is celebrated on February 2 every year.
This year, the Groundhog Day celebration at Gobbler's Knob in Punxsutawney will be open to the public. Visit The Punxsutawney Groundhog Club website for more information.
Groundhog Day falls on a Thursday this year, and it's a great time to plan a celebration with the fam. Our friend Cindy L. shared the photo above from one of her annual Groundhog Day parties. Cindy's husband Rich makes cupcakes that are super easy for the kids to make.
Groundhog Day Cupcakes
Ingredients:
Cupcakes made from box mix
Vanilla frosting
Chocolate frosting
Green sprinkles
Teddy Graham crackers
Directions:
1. Make cupcakes from a box mix and let cool.
2. Decorate with vanilla and chocolate frosting as shown in the photo.
3. Sprinkle with green sprinkles and top a Teddy Graham to look like a groundhog peeking out from his winter burrow!
The kids can also join in the fun of the day by making their predictions ahead of time, then check the internet or watch the news in the evening to find out if Phil saw his shadow.
